Roasted Mediterranean Vegetables on a BBQ Griddle

(Serves 2 people)

1 small aubergine

½ yellow pepper

½ red pepper

½ courgette

A couple of shallots

4 red cherry tomatoes

3 cloves of garlic

A mixture of thyme, rosemary and oregano

Salt and pepper

Drizzle of olive oil

Serves 4 people

(For a cosy bbq get-together. Otherwise, keep doubling the amount if you have more guests) 

Garden Style Direct has a selection of high quality gas bbq

4 pork chops

a couple squeezes of honey

2 finely sliced garlic gloves

8 table spoons of soy sauce

1 cup of white wine vinegar

a handful of rosemary, Thyme, Bay Leaves

Salt and pepper

1.) Mix all the ingredients for the marinade.

2.) In a large bowl, pour marinade over the meat. Make sure every part of the meat is covered.

3.) Leave for a couple of hours in the fridge. For the best results, leave overnight to soak up ready to barbecue for the weekend.

Try this: You may want to put marinade and meat into a plastic bag, tie the bag together and turn it from time to time whilst in the fridge.

4.) Once the gas barbecue is ready to use, which should take less than 5 minutes, place the marinated chops over the bbq grill.

5.) You need to watch out for the chops, turning when needed. Once it is cooked, you will notice the honey caramelising and flavours maintained. Our gas bbq should keep the juiciness of the meat.

6.) Perfect served with fresh summer salads on a bed of basmati rice.
